Wild venison









Learn from cow farmer neighbour that deers are a threat, because they come in group at night, destroy fencing and eat grass, reducing the feed to cows. They have to ask hunter to come to remove them, an invasive species that government needs hunters' help to control population.

So we know there is a hunter nearby and went to visit him to buy some venison, an easy way to increase nutritious wild meat intake. His full time job is working as chef and hunting is a hobby. He has a proper cool room to hang carcasses and happy to sell pieces or the whole piece at much cheaper price, to reduce his work load. Irish are not keen to eat venison so most are exported to other European countries.

This Sika deer carcass is around 20kg and sells for Euro 55.

We cut it up into parts and portions we like, 25 portions for 2, really great value for a little effort, 2 hours work for us. 







Have prepared ribs, leg steaks and lap, the meat is dark red and amazingly tender and full of flavor, though very lean
