1. Cut liver into strips, marinate with soya sauce, sugar, cooking wine and 1 tbsp of cornstarch.
2. Cut chorizo into slices, wash a handful of parsley, chop up roughly.
3. Cook chorizo at medium heat, the fat inside will render out, keep aside.
4. Turn heat up, sear liver in chorizo oil, stir until just cooked, add in chorizo slices and parsley.
