Eggplant and rocket salad


1. Bake whole eggplant at 200˚C until soft, around 30 minutes.
2. When cooled down, cut in half and scoop out flesh onto chopping board, mince roughly.

3. Mince rocket and mix with eggplant, season with salt, balsamic vinegar (or lemon juice) and olive oil.
