Freshly pressed olive oil, Istria, Croatia

3 different bright green oils, from different varieties of olives, pressed in the last 2 weeks. This summer was so dry and hot, the olives were smaller and less in quantity.

However the flavor is so intense, starting with a mild fruity taste, a light texture, ending in a spicy aftertaste.
