Brittany blue lobster is available all year round, most abundant during summer, selling price cheapest in July.
Langoustine is available all year round, most
abundant in May/June, lowest price is around euro 12/kg.
Scallop is available from November to
April.
Bouquet (small shrimp) is available from November
to March.
Oyster (natural ) is available from
September to April, summer is the reproduction period, less flavor and flabby.
Good sizes oysters being served during
summer are genetically modified triploids, which could not reproduce, direct all
energy into growing big.
In comparison with natural oyster of the
same size and species, triploid, grown at a faster rate, has lighter colour and
smoother shell.
