The organic Iberico
jamon has a good layer of fat, the outer part is yellowish and rancid, whereas
inner part is beautifully pinkish white, tasted sweet.

It is too much a waste
to throw it away (and very expensive to do so too), so I cut them into strips
and rendered the fat out, at low heat.
The crisps are mildly
salty and flavorsome, the lard is pinkish and very soft, beautiful aroma.
