Strawberry and rhubarb compote



Made a proper trifle using strawberry and rhubarb compote, to serve at the dinner party.

A sponge cake mix is baked in a lined shallow tray to be used in composing the trifle.
Instead of whipped cream, I use sour cream diluted with yogurt and sweetened slightly with honey, use a whisk to add volume and make the texture lighter. 

Strawberry and rhubarb trifle

Into a bowl, add strawberry and rhubarb compote, sponge cake cut into bite size pieces, and sour cream mixture alternately.
