The Chairman restaurant 大班樓

 
I have eaten in this restaurant a few times this month, want to try dishes on the menu that sounds interesting to me (creative use of ingredients). Being one of the top 50 restaurants in Asia, I have high expectations.

The dishes below are my favorites, based on good combination of flavors and the work involved.

Baby Squid in Cold Soya Marinate and Szechuan Pepper


Razor Clams Steamed with Aged Lemon and Mixed Herbs


Crispy Fermented Tofu with Szechuan Chilli

Steamed Fresh Flowery Crab with Aged ShaoXing Wine,
Fragrant Chicken Oil & Flat Rice Noodles


Pan Fried Crispy Chicken Stuffed with Shrimp Meat
Cooking degree of the dishes is just right, the flavor rich yet not overpowering.


I tried other beef and lamb dishes too, unfortunately found them too fried or dry.
