Seared scallop with grapefruit salad

Thought of another way to present mild
flavored scallop, on a small pile of grapefruit salad, simple,
refreshing and not dominating.
1. Dry scallop, sear in butter, a few at a
time in a medium hot pan, until edges brown, rest to cool down.
2. Make a salad with grapefruit, toasted
cashew nut, fresh coriander, season with salt and pepper.
