Smoked mackerel in 2 ways

There is always a pack of smoked mackerel in the fridge, available for lunch any day.  

 

1. Smoked mackerel, potato, fennel rostie

Grate potato, cut fennel into small pieces, break mackerel in to small pieces, mix together with one egg and olive oil. Place big spoonful on baking paper, bake at 180˚C until golden, around 25 minutes.

 

2. Smoked mackerel parsley parmesan pie

Smoked mackerel parsley parmesan pie

 

Form a pie crust with half flour, half almond flour and egg to a thick paste. Form a disc on baking paper, bake at 180˚C until hard, around 15 minutes.

Mix together mackerel pieces, chopped parsley, place on pie and sprinkle parmesan on top, bake at 180˚C until mackerel warm and parsley wilted, around 10 minutes.
