Very soft marmalade cake

3 yolks

240gm Greek yogurt

100gm marmalade (or any jam)

60gm flour

80gm almond flour

 

3 whites

50gm sugar

pinch of salt

 

1. Mix the first 5 ingredients, whisk whites with sugar and salt until hard peak.

2. Fold egg white mixture into yolk mixture, pour into baking dish, sit in a tray of boiling water, bake at 150˚ for an hour.
