Razor Clam in fermented black bean sauce

Sweet savory spicy fermented black bean sauce is a fond memory of how clams were served in street stalls in the good old days.  A strong taste, to go with strong tasting shellfish.

1. Quick blanch razor clams until open up.

2. In a pan, sear garlic, fermented black bean, spring onion, add rice wine, sugar and chili, add razor clams and mix well.
