baked Ping Yuen Chicken
I have not eaten chicken for a long time, not my favorite meat mainly grain fed and those in Ireland are very muscular but not tasty.
This salt baked Ping Yuen chicken, served at Yung Kee, is lovely, I could happily eat all the gelatinous skin, if allowed to, the meat is juicy and tender, a memorable treat.
