While in Japan, I ordered tofu whenever available, both cold and hot were delicious.
I started to create similar dish, a lot depends on the texture of soft tofu available. However, a small cube of tofu is always easy to please, and is a nice starter.
Tofu with dry shrimp, scallion and bonito flakes
In a medium hot pan, dry cook shrimp and scallion until fragrant, place on top of tofu, then bonito flakes, in a sauce of soy sauce, sesame oil and rice wine.
Tofu with Myoga ginger and scallion
Very curious of the flavor of Myoga ginger 茗荷, the flower bud of this variety of ginger (I bought the root to try to grow in Ireland), cut into thin slices and serve on tofu, with sauce as above. A nice crunch, beautiful colour, and very very mild onion like taste.
