Invited vegetarian neighbours to come for dinner, simple finger food starter of mini Yorkshire puddings, easy to prepare ahead and keep warm during serving quiche, and never fail to please potato domino.
Yorkshire puddings with home grown potato and pumpkin
50gm cooked potato, or cooked pumpkin
30gm flour
100 gm milk
1 egg
pinch of salt
1. Mix ingredients together, brush oil in mini cupcake baking tray, heat to 210˚C, pour 2/3 full of mixture, bake until risen and golden, around 15 minutes.
2. Befer serving, sprinkle sesame seeds, caraway and grated cheese on top, bake at 190˚C to warm up.
Quiche with cauliflower, carrot and chestnut
1. Cut cauliflower into florets, bake at 170˚C until soften and shrink a bit.
2. Cut carrot into small pieces, cook in 250ml milk and 250ml cream, season with nutmeg, salt and pepper.
3. Whisk 3 eggs, pour slightly cooled milk mixture into eggs to warm up.
4. Blind bake pastry in baking dish, when cool , line the bottom with grated cheese, arrange cooked cauliflower and chestnut on the bottom, pour on top milk cream carrot mixture. Bake at 170˚C until set, around an hour.
5. Before serving, add mixture of grated cheese, chopped up red bell pepper, pecan nut on top of quiche, warm at 200˚C oven for 15 minutes.
Potato domino, crispy edges, fondant center
1. Slice potato as thin as possible, keep as a stack.
2. Place in a big baking tray half lying down, drizzle with olive oil and sprinkle salt.
3. Bake at 200˚C until edges golden, around an hour. Spoon oil in the tray onto potatoes every 15 mintues for even cooking.
