I like elderflower cordial, bright fresh green flavour. Instead of boiling in water and making sugar syrup, I just macerate flowers in honey, same result, slightly more healthy and a lot less work.

Same concept, I macerate hawthorn flowers and Rugosa rose petals in honey. The former is reputable to be good for the heart, and the latter has beautiful fragrance.
