On line fish monger announces the by-catch of a 260kg blue fin tuna in Irish water, just the week I am back home, so lucky. Bought o-toro and chu-toro, but it turns out to be less fatty and more red than normal.
Fish monger explains that it could be a fish just swim north from Mediterranean, not fatten yet, compare with winter/spring caught tuna.
Still nice as sashimi, and the last spring’s portion for searing.
