Blue fin tuna collar

 

Fish collar is a popular dish in Asia, most of the time well seared. There are a lot of different textures of meat hiding in between bones, some oily, some gelatinous, some firm, all delicious.
 




 
This blue fin tuna collar is far too big for my pan, so I bake it with a lot of scallions. First time to have it, a memorable delicious feast.
