Victoria plum






A total of 3 young trees and they produce mature sweet juicy fruits progressively, too much to eat them all and have to preserve and put away. 

I tried to infuse some in vinegar and honey to make shrub, in a week’s time I have a nice cordial. The remaining plums are still nice to eat and I add freshly grinned cardamon on top before baking, 200˚C for 20 minutes then rest until cold in the oven to dry up a bit more. Delicious flavor and fragrance, goes well with cake and yogurt.

I also do the same with fresh plums, split open and sprinkle cardamon before baking, same good result. After baking they shrink a lot, take up less room in the freezer.
