1. Warm 400ml milk with a pod of vanilla (seeds scraped out into milk) and 50g sugar, rest in a covered pan to extract the flavor of the vanilla.
2. Mix 3 yolks with 10g cornstarch and 50g sugar, whisk into re-heated vanilla milk to make pastry cream, add in chopped semi-dried peaches, cool down before pouring into ice cream machine.
3. To make blackcurrant ice cream, add 100gm of yogurt into 500gm blackcurrant jam, pour into ice cream machine.
