Very easy to make salad that is colourful, with
different textures and full of flavors.
1. Cook 1 part quinoa in 2.5 part water
until soft, around 15 minutes.
2. Shred carrots into small pieces, season
with salt and pepper. Mince a bunch of mint, mix with carrot, cooked quinoa and
cashew nuts. Season with lemon juice, salt, pepper and olive oil
