Some dishes to serve when having an
aperitif at home.
Air-dried beef & asparagus roll
1. Peel the outside tough skin off
asparagus, if necessary, blanch or bake until just soft.
2. When asparagus are cool, wrap a piece of
air-dried beef on the outside, trim to size.
Chorizo cream on endive
1. Remove the skin of chorizo and cut into
small pieces, mix with sour cream.
2. Separate endive into leaves and arrange
on serving platter, quenelle a spoonful of chorizo cream in the middle of each
leaf.
Smoked salmon with shredded carrot
1. Shred carrot, season with salt, pepper
and olive oil, rest for 10 minutes before use.
2. Spread butter on bread, then a spoonful
of carrot, top with a piece of smoked salmon.
