Loquat (枇杷)sorbet



The first time I see loquat in France, a friend who lives near the river has an old loquat tree planted by his parent. The fruit is lichee size, sweet and tart.
1. Squeeze fruit out of skin, remove stones. Add in half a lemon juice then blend well.
2. Add 100ml of a mildly sweet white wine to 500ml of loquat, churn into ice cream.
