Crush fresh rosemary with a big pinch of
salt, add olive oil and marinate for an hour. Brush rosemary oil on pizza dough
and sprinkle sesame on top.

Boil whole garlic until soft, around half
an hour, crush and season with salt and olive oil. Spread garlic paste on pizza
dough, sprinkle chopped red onion (mixed with oil) on top. When baked, spoon
marinated tomato (remove skin, cut into cubes, season with salt, pepper, basil
and oil for half an hour) on pizza before serving.
Smoked mackerel and pickled cucumber

Cut cucumber into slices, salt for half an
hour, remove liquid, marinate in brown sugar and vinegar for 2 hours.
Remove skin of smoked mackerel and tear
into bite size pieces. Cut mushroom into slices, add salt, pepper and olive
oil, marinate for half an hour.
Spread tomato paste on pizza dough, place mushroom
and mackerel on top, sprinkle grated Gruyere, when baked, put pickled cucumber
on pizza for taste and crunch.

Spread tomato paste on pizza dough, place
mushroom and sliced confit gizzard on top, sprinkle grated Gruyere. When baked,
add a handful of sliced raw green pepper for colour and crunch.
Goat cheese and beetroot

Place cooked beetroot, slices of medium dry
goat cheese on pizza dough, sprinkle grated Gruyere, when baked, add toasted
pine nut and drizzle honey all over pizza.
