Smoke bonito


It is now the time to catch Bonito in the Atlantic Ocean. They swim in shoal and jump out regularly, which is how to spot them and throw in the fishing line quick. They weight around 2-4 kg.
The meat is very tender and fragile, I like to salt them first then hot smoke.
Cure with a mixture of 7% brown sugar and 3% salt by weight of fish, pepper, chili etc optional, for a day.
