Super fresh tuna


After implementing fishing ban for a few years, the population of tuna is going back up in the Adriatic Sea. Now there is tight control on how many could be caught each year. 
Local fishermen in Rovinj, Croatia catch tuna in the early morning.
The tuna belly looks like a piece of top grade steak.

Sashimi - remove skin and inside lining of belly, cut into long slabs then thin slices.

Probably because of growing up in the warmer Mediterranean Sea, this "otoro" is not as oily as their north Atlantic relatives, but still sweet and delicious.

Ceviche - a Peruvian dish. Toss slices of tuna in lime/lemon juice, finely chopped onion, chili, parsley, salt and pepper, serve immediately.

Carpaccio - an Italian dish. Toss slices of tuna in lime/lemon juice, then transfer to a plate and drizzle extra virgin olive oil on top. This is my adaptation which adds a mild citrus taste.
