Coarse pesto, zucchini and carrot "noodle" |
Every time when I make coarse pesto (basil,
pine nut, Parmigiana cheese, olive oil, salt), I will make a jar to keep in the
fridge, very handy to use in flavoring dishes.

1. Use julienne peeler to make zucchini and
carrot fine strips, like noodle.
2. Cook in oil and a little water or broth,
mix with coarse pesto before serving.
