Lamb loin in goat sauce

Lamb loin is easy to cook and easy to please, very tender and with mild flavor. I used some soft goat cheese to make a sauce to go with it.
1. Season lamb loin with salt and pepper.

2. Sear gently until light golden on both sides, add goat cheese, fresh thyme and some milk, cover with lid and cook until loin felt firmer, a couple of minutes, for a pink result.
