Citrus jam

Buddha's hand

Out of all the various citrus trees I have planted 5 years ago, the most consistent one producing fruits every year is Buddha's hand. Kumquat and Calamansi both give sporadic harvest.

Menton lemon

This lemon tree from Menton, south east France, a specialty from that area, produces delicious lemon with non bitter peel, has finally produced one small lemon this year!

spiced Buddha's hand and fig jam

The 2 Buddha's hand fruits are cut up into thin slices, cooked in a mixture of orange juice, lemon juice, water, honey, and flavored with ginger and cloves. Bring to boil and cool down 2 times until skin soft, add dry figs, and repeat boil and cool down until fig seeds thicken the jam.
