Went for dinner at Ginpei, 銀平,for fresh and simply prepared local produce. What caught my eyes and taste buds is the miso served with Japanese yam.

Not the usual paste like texture, it has whole rice grain, whole barley grain whole soybean and citrus peel, deliciously savory sweet with good texture to chew on.
The next day, went to a miso shop and learn that this is local Shinsanji style. Unlike the restaurant that adds citrus peel, the common way is to eggplant into miso, with the same savory sweet chewy result.
