Smoked fresh anchovy and raisin noodle

Got the idea from a pasta dish eaten in Sicily, pairing salted anchovy with raisin, left a strong impression because hard to imagine putting the two ingredients together and worked so well. This is toned down version using smoked fresh anchovy instead.

 

Smoked fresh anchovy and raisin noodle

1. Bring single cream to boil, simmer with raisin until soft, season with salt and pepper.

2. Cook noodle and when ready, add to cream sauce, mix in anchovy and chive.
