Tasty and easy to make, great way to use up left behind fish and cooked potato.

Mackerel, scallion potato cake (before cooking)

1. Mash potatoes, mix with cooked mackerel, scallion, season with salt, pepper and olive oil.

2. Use spoon to form thin cakes, use fork to make lines so that the cake will brown well. Bake at 200˚C until golden.
