Mixed green herb garlic sauce

The Irish cool wet weather is very good for herbs, parsley, scallion, coriander, sorrel, tarragon, oregano, marjoram, sage, fennel are growing big and frankly very hard to keep up with using them.

Saw this recipe of mixed green herb sauce, minced together so that no one herbs dominate the flavor. A way to make a lot to keep and can use a lot in many dishes like soup, plain cooked vegetable, fish etc.

1. Chop finely different herbs, season with salt, mix well to soften.

2. Add a few confit garlic with some of the olive oil cooked in, as the liquid part of the sauce. This way the sauce is not as oily as when only olive oil is used, mix with herbs.
