Crayfish is rare to find at the market, because it is indeed rare in Ireland, and most are exported directly as it is expensive for the local market.
Bought this direct from the lobster holding place at Tullaghmore, 2.1kg! Parked the camper at Lough Melvin and steam it right away, using the formula: 9 minutes for the first lb, then 4 minutes for each extra lb, so steamed for 23 minutes, perfect.
Crayfish has thin shell and is full of meat in every parts, two of us can't even finish the head, only the legs. It is really good that you can pull the leg meat out from the shell in one long piece, pretty easy to eat compared with lobster and crab.
