Season of oyster started, this time I tried native flat oyster, wild one from the west coast. This original variety with rounded shell is hard to find now, replaced by the Pacific long oval variety whick is faster growing.

This wild flat oyster is less creamy than farmed ones, with more crunch and deeper marine flavor.
