Elderflower honey
Elderflower has been blooming, with a pleasant fresh floral perfume, it is a popular cordial, normal mixed with lemon and sugar.
I like to have it pure, not using lemon, just simply submerge a lot of flowers (no thick stems) into honey, let it infuse for 2 weeks. The honey, after absorbing the moisture of the flowers will start to ferment. Filter out the honey and keep in the fridge, the fermentation will stop. I enjoy it diluted with warm water.
