Horse mackerel with fermented black bean
After having a few meals of grilled fish on camper trip, once home, I used other ways to prepare horse mackerel so that it is not the same dish on the table again, and again. This is a strong flavor one, a nice change.
1. Season horse mackerel with salt and pepper for a day.
2. Mince ginger, garlic and spring onion, mix with fermented black bean with some rice wine and olive oil .
3. In baking dish, spread herbs mixture on top of fish, wrap in foil and bake at 180˚C for 12 minutes, rest for another 5 minutes.
The result is like steamed fish, but this way is cooked in its own juice, no addition of condensed steam vapor.
