Honey fermented elderberry syrup

So easy to make, just mix ripe elderberries with raw honey, let honey do the job of extracting the juice out, neutralize mild poison in the tiny seeds, and ready to use as syurp. I mix it with white wine, like Kir, instead of using cassis, delicious.
