To avoid the hustle and bustle in Colombo, I choose to go 45 min away from Negombo International Airpoet to stay at Ambarella Lodge, a 20 acre coconut and spice plantation in the countryside.
A relaxing day with a full Sri Lankan breakfast, a ride in tutuk to see the town and the veg and fruit available.
A long swim in the cool water in the pool, followed by a guide tour of the spice garden to learn the various plants. They are all so fragrant, cinnamon, lemongrass, pandan, nutmeg, clove, curry leaves, pepper etc. A lot of work to care for the plants and prepare the spices, which the young generation has little interest to get involved, a worldwide problem.
A cooking class by the Chef to make a full dinner, dal curry, coconut sambol, prawn curry and coconut roti.
The
starting basic herb spices in all the dishes are black mustard seed,
cumin, fenugreek, garlic ginger, curry leaves, pandan leaves, fresh
chili pepper and onion, all well sweated in oil. Then the main
ingredients and coconut milk. Next is individual seasonings like
turmeric, curry powder, chili powder etc.
We asked them to season like how they used to do and the flavour comes out a lot better than last night’s dinner dishes.
