2 day dried mackerel


 

 

 

 

Mackerels were delivered whole, the best way to keep their freshness, at very affordable price.

Took a bit of time to fillet them, but that’s good for 5 meals. Then marinated in salt and rice wine. The alcohol helped to keep fish in pleasant smell while drying in the fridge for 2 days.

The fish cooks and skin crisps faster after drying, and gives a better firmer texture. 

 It is a bit early to enjoy mackerel, as they have just laid eggs and are still very lean, not the fatty taste that I like.
